Sulawesi Kalosi Toraja – January 2008
It’s been a long while since the last really tasty Toraja – but this one makes up for it!
Sulawesi coffees tend to be like many typical Indonesian beans – low-acid, big body and a deep, earthy feel.
Some beans come wet processed, but often the better tasting cup is made with the uglier looking dry processed fruit. This bag is from the Sulotco plantation. The Sulotco plantation is 3.300 hectares. Only 1.600 hectares are planted with coffee trees. The rest is used for a school, a hospital and dwellings.

What makes this Indonesian bean stand out in my books is the variation on the typical character.
This bean is superbly balanced. Right from a day post-roast, it cupped in a very even and balanced way. It has good body, but no so much that it dominates.
Acidity would be described as medium/soft – enough to give it a gentle lift out of the typical earthiness of a Sumatran.
There is a subtle sweetness that is delightful as a breakfast cup from the plunger.
Classic Sumatran earthiness is there, but at lower levels, allowing a hint of walnut or other nuttiness to come through.
As the sample rested, the aromatic qualities grew, and there even a hint of floral overtones at 3-4 days post roast.
